BETTE'S BUTTERMILK PANCAKES

INGREDIENTS:
-- 2 cups all-purpose flour

-- 2 tablespoons sugar

-- 2 teaspoons baking powder

-- 1 teaspoon baking soda

-- 1/2 teaspoon salt

-- 2 eggs

-- 2 cups buttermilk

-- 1/2 cup milk

-- 1/4 cup unsalted butter, melted

-- Choice of berries, sliced bananas, raisins or chopped toasted nuts (optional)

-- Oil for griddle

INSTRUCTIONS: Combine the flour, sugar, baking powder, baking soda and salt in a large bowl.

Lightly beat the eggs with the buttermilk, milk and melted butter.

Just before you are ready to make the pancakes, add the liquid ingredients to the dry ingredients all at once, stirring just long enough to blend. The batter should be slightly lumpy.

If you want to add fruit or nuts, stir them in now, or you may sprinkle them on the pancakes while they are on the griddle.

Heat a lightly oiled griddle or heavy skillet over medium-high heat (375 degrees on an electric griddle).

Pour 1/4 cup batter per pancake onto the griddle or skillet, spacing the pancakes apart so they do not run together. When bubbles appear on the surface of the pancakes and the undersides are lightly browned, turn and cook for about 2 minutes longer, until lightly browned on the bottom.

Serve immediately on warmed plates with the topping of your choice. Serves 4 (yields about 24 four-inch pancakes.)

Gonna try these for breakfast tommorow. 8)

Fastest, Easiest Homemade Pizza Crust

Ingredients

2 cup unbleached all purpose flour
1 cup whole wheat flour
1 tablespoon baking powder
12 oz. beer
Directions:

Preheat oven to 400.

Combine all ingredients. Dough does not have to rise at all, but will be fairly wet and sticky. Press into oiled cookie sheet (12 x 18" or slightly smaller works well). If it seems too sticky to work with, sprinkle a little flour on it as you pat/press it into the pan.

Top with your favorite sauce & toppings. Bake 20-25 minutes or until dough is browning & crisp around edges.

Voila! Enjoy!

Serves: 4-6

Preparation time: 30

A REAL:
Nieman Marcus Chocolate Chip Cookie Recipe

An urban myth is a modern folk tale, its origins unknown, its believability enhanced simply by the frequency with which it is repeated. Our signature chocolate chip cookie is the subject of one such myth. If you haven't heard the story, we won't perpetuate it here. If you have, the recipe below should serve to refute it. Copy it, print it out, pass it along to friends and family. It's a terrific recipe. And it's absolutely free.

Ingredients
1/2 cup unsalted butter, softened
1 cup brown sugar
3 tablespoons granulated sugar
1 egg
2 teaspoons vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1-3/4 cups flour
1-1/2 teaspoons instant espresso powder, slightly crushed
8 ounces semisweet chocolate chips

Directions
Cream the butter with the sugars until fluffy.
Beat in the egg and the vanilla extract.
Combine the dry ingredients and beat into the butter mixture. Stir in the chocolate chips.
Drop by large spoonfuls onto a greased cookie sheet. Bake at 375 degrees for 8 to 10 minutes, or 10 to 12 minutes for a crispier cookie. Makes 12 to 15 large cookies.
