Who enjoys it? I know I do mmm fermentation produces so many goodies bread, beer, kimchi, sourkraut, kombucha, wine, cheese, kefir, mead,
yogurt, pickles, miso, tempeh, vinegar, cider, naturally carbonated sodapop, chocolate, coffee, and a whole host of other fermented goodies.

Does anyone have any experience with the Lalvin EC-1118 Saccharomyces bayanus strain versus Red Star's Premier Cuvee (supposively it used to be called the Prise de Mousse) and the story goes it is a very similiar Saccharomyces bayanus to the Lalvin strain.

I currently have not had much time to setup side by side tests for comparison we currently only have a small batch of a dark extreamly hoppy apple flavored beer with 1 gallon using the Lalvin EC-1118 and 1/2 gallon using the Red Star Premier Cuvee unfortunately the 1/2 gallon vessel is an amber growler so observation of that one has been harder.

Any wonderfull recipes?

i have a very basic beermaking setup at home. lately I've been using a system which sounds very similar to yours. my product is also a strongly hoppish apple cider beer (the cider part seems to mess with some of the chemistry though).

i am not quite as educated about the strains that i use as you seem to be. i will have to read the label on my cheater's-formula when i get home!

I've been thinking about planning something, but in my current apartment there's just no way I could pull such a project off. In the late Spring or early Summer though, we'll see 8)

I ahve successfully brewed one batch thus far of pale ale. it was pretty good, from a kit. I have a turkey fryer burner with a 40 Qt steamer pot, the black enameled kind. I did a primary fermentation in a bucket, then xfer'd the wort over to a 6 gallon glass carboy that I kept in the dark for like 2 weeks, and then used priming sugar for the carbonation process, in bottles. the whole procedure took like a month and a half to 2 months. I am trying to get set up with a beer keg kettle, got some parts on ebay but need much more. I am getting ready to start a batch of porter once I get around to it.

Nope, home brewing.

Do make my own sauerkraut every couple years though.

My best friend is way into homebrewing, and software development. The two combined created his company called "Pro Mash". It's pretty amazing customizable brewing software. He sells a ton of it, so I guess it is pretty good.

1.) My wife has been making HOMEBREW Alaskan Sourdough Bread
for the past 30 years.... the "starter" she got from a friend in
Alaskan when we were stationed there way back when....
Good stuff..... keeps you regular ! She makes 4 loaves a week ! :D

2.) When ya make homebrew beer or wine..... store in COOL AND
DRY PLACE..... otherwise the damn beer caps on the bottles will
pop off as it builds up the gas inside !
We used to make wine, using a condom (UNlubed) over the top
of the jugs in the closet. The condom would blow up like a balloon.....
HUGE :shock: ...from the gasification during brewing.
We would pinch-off the neck of the rubber, run to the window
or outside and RELEASE all that terrible smelling gas.............
it was fun though.....
.....one time.... the damn rubber blew-up inside the closet and
stunk up the house real bad !
